Gluten, Sugar-Free Blueberry Muffins

As you can tell, I’m simply banana’s about oat and banana’s.

This recipe is from my dietician and friend Mayuri Bhawan. It’s got absolutely no oil or fat and is one of the healthiest muffins I’ve ever eaten. I’ve tweaked the baking time to include my grated apple. If you only use blueberries I find that the muffins are not sweet enough for my tastebuds.

Couple this with a cup of masala tea, and you’ve got a fat, gluten, sugar-free delight. This batch yields 6 large muffins.



Ingredients

1 banana

1 cup of oats

1 large egg

1 tsp vanilla

1 tsp baking powder

1/4 tsp bicarbonate of soda

1/4 tsp salt

1/2 cup of plain yogurt or milk

1 tsp soaked chia seeds

1 grated apple and 1/2 cup blueberries

Method

  1. Preheat oven to 200 degrees

  2. Spray a muffin pan with spray and cook.

  3. Combine all the ingredients in a blender, excluding the grated apple and blueberries.

  4. The batter should not be runny. Gently fold in the apple and blueberries.

  5. Pour into a muffin tray and fill until the brim.

  6. Bake for 20-25 minutes, or until a skewer comes out clean.
