Amaranth Cereal

I have been breaking my head to find cereal that’s nutritious for my mum.

She regularly love maize meal porridge, and eats All Bran, Jungle Oats and Weet-Bix. But as she’s aged I’ve noticed that she’s been losing weight. So as a result I am always on the lookout for cereals that I can make that’s rich in nutrients, especially fats and protein.

I found a product called Thrive Baobab in Jackson’s and they make an instant Amaranth cereal mix. I loved the flavour and my mother enjoys the nuttiness of the cereal. If you make it and let it stand for a little while, it gets creamier.

To make this cereal you can either mix in water, or milk. I suggest you use milk because that’s protein and coupled with it’s hemp seed protein powder, if you’re a Vegan or a Vegetarian, this is great.

Alternative, you can make your own Amaranth cereal by boiling it like you would jungle oats.

Did you know: Amaranth is a seed. It’s also an ancient grain and it can be had any time of the day with a handful of berries. Amaranth has nutrients that support bone structure, is high in magnesium (good for runners), protein and fats.

Ingredients for two meals

1 cup amaranth

3 cups water

raw honey/tbsp peanut butter

cinnamon

1 cup milk

Method

  1. Mix amaranth and water and bring to a boil on a high heat.

  2. When it starts to boil, lower the stove to very low and let that simmer for 20 minutes. Add a little bit of water if the cereal starts to get too thick.

  3. Stir in peanut butter and add milk.

  4. Sprinkle honey, cinnamon and fruit over your cereal and serve warm.
