Banana Pancakes

Ingredients

1 1/4 cup of flour (you can use oat flour)

2 tbsp chia seed (optional)

2 tbsp pea protein powder (optional)

2 1/2 tsp baking powder

3/4 cup milk/oat milk/lactose free milk

1 egg

3 tbsp oil

Pinch of salt

1 ripe banana, smashed finely

1 tsp vanilla

Method

  1. In a large bowl, sift all your dry ingredients and give it a whisk.

  2. Mix all your wet ingredients with a whisk.

  3. Fold wet ingredients into your dry ingredients and add banana and vanilla.

  4. Make in a hot pan/griddle with Spray-and-Cook.

  5. This batch will make exactly 7 pancakes if you ladle from a 1/4 measuring cup.

  6. Enjoy with whatever fruit toppings you like, macadamia nut butter, honey and cream.
