Grilled Tofu

I’m obsessed with different types of protein and how best I can get more in without consuming meat. 

I hardly eat meat, not because I dislike it, because it constipates me. While not many of us like to admit that we suffer from tummy issues it is often the reality for so many of us. Digestion issues, bloat, and the tiredness often associated with these chronic conditions go unnoticed for a very long time because we’re so used to eating everything and feeling stressed because of our lifestyle. 

I have concluded that if I fuel myself correctly by eating protein in the day, cravings will stay at bay. It works for me and I’m able to run a lot because of the types of protein I choose to eat. 

This recipe is the latest in a series of experiments that I’m loved doing over the past week. Tofu is pretty tasteless. I’m learning that with the right flavour combination, it can be transformed into something quite wonderful.

Ingredients

2 blocks of hard Tofu (roughly the size of a palm)

1 tsp dry vegetable stock (I use the Woolworths brand) mixed in 1/2 cup of water

1 tbsp olive oil

1/2 tsp dry ginger powder

1/2 tsp sumac powder

1/2 tsp dry rosemary

1/2 tsp dry thyme

1/2 tsp chili flakes (optional)

2 tbsp white teff flour

salt and pepper to taste

Method

  1. Place tofu in a towel and pat it dry. You are draining the excess water.

  2. Cut into cubes and place in a bowl.

  3. Add vegetable stock, salt, pepper, chili flakes, herbs, sumac, ginger, and olive oil.

  4. With a spoon or your hand, rub this well into the tofu.

  5. Lay a sheet pan with baking paper and place each block of tofu on its side.

  6. Bake at 190 for 1 hour or pop into an air fryer for 30-40 minutes. If you’re using an oven - toss every 20 minutes. Grill for 5 minutes right at the end for a crunch.

  7. Serve with any sauce of your choice. I ate my tofu with rice, edamame, and some vegetables.
