Peanut Butter Cookies

So when I first went on diet I was acutely aware of what I was consuming. Some days were good. Some days were not so good.

I remember in my second week of being on my meal plan I fell of my healthy wagon in spectacular fashion.

My mum was staying with me at the time and it was Autumn so the weather was a tad cool. I was craving something sweet with my tea so badly that I actually drove to the nearest Woolies and feasted on two donuts.

I vowed then that I would teach myself how to make sweet treats and to make them healthier than a donut. This recipe is just one of my concoctions. Do give it a try! It’s really worth the peanut butter and it’s so simple.

Recipe

  1. Mix 1 egg, 1 cup of Xylitol and 1 cup of peanut butter with a wooden spoon.

  2. Roll balls and drop them on a baking sheet.

  3. Bake at 170 degrees for 12 minutes
