Sugar-Free Coconut Date Balls

Dateballs is a good snack after a workout or during a run if you’re pushing 20km+ during a race. It’s packed with healthy sugars and fats and will leave you feeling very satisfied. My sister used to make these with rice crispies over Diwali and I used to absolutely love them.

In my recipe I use walnuts. They’re have a high omega-3 fatty acid content. Walnuts also contain antioxidant and phytosterol content, which have been linked to a lower risk of breast cancer. Score. Dates on the other hand is a good source of fibre and helps prevent constipation. According to studies, antioxidants in dates can also lower cholesterol and help prevent cardiovascular diseases.

Ingredients

Prepare a food processor

2 cups Walnuts

1 cup dessicated coconut

2 cups dates (fresh Medjool or the Safari block)

Method

  1. Add walnuts in the food processor and blitz until it resembles big crumbs.

  2. Add dates and blitz until it forms a batter.

  3. Add 3/4 of your coconut but blitz until it’s just about mixed. Try carefully not to overblitz in case the nuts start to secrete their natural oils.

  4. You can cover the balls with your leftover coconut or chuck everything in the food processor. The choice is yours.

  5. Refrigerate and enjoy cool.
