Tuna On Toast

A toasty meal goes down well on days when it’s sweltering outside. In Johannesburg, it’s been painstakingly hot.

I make tuna on toast often when I don’t want to cook and want something nice and light for supper. Add some choice sides and this will become a norm on a hot day.

Ingredients

1 can of tuna

1 tbsp mayo

1 tbsp low fat yoghurt (I use Gourmet Greek)

1/2 tsp salt

1/2 tsp black pepper

1 tsp sumac

1 tsp peri-peri spice

1 tsp lemon juice

handful of dill

handful of coriander

basil

1 green chili, chopped

1/2 onion, diced

Method

  1. Mix all your ingredients into the tuna and mix well.

  2. Lay it atop some lettuce on a chunk of bread or spread it on crackers.

  3. Garnish with basil and serve with a side salad, or plain cucumber slices, or cherry tomatoes.
