Cauliflower Rice
Cauliflower is naturally low in calories and the perfect rice at dinner time.
Vegetables were one of the things I never ate enough of growing up. I never appreciated it as much as I do now because I wasn’t armed with the correct nutritional information. Now I understand a little bit about how my body functions I am aware that I cannot eat carbs at night time. Especially bread, rice, and potatoes. That was a massive problem for me and up until now it still is.
The only difference is, is that I know how to trick myself into wolfing down my dinner with rice made from cauliflower.
Did you know: Cauliflower is naturally high in vitamin C. Even I was surprised. Its talent is that 1 raw cup contains only 25 calories. So in the case of eating a vegetable (not potato) curry for example. You can have 1 whole cup of cauliflower rice and as much curry as you want because vegetables are considered free food.
Ingredients
1 whole cauliflower, grated
1 tsp red chili flakes
3 sprigs of rosemary
1 tsp jeera seeds or jeera powder
1 tsp oil
salt and pepper to taste
coriander to taste
1/8 cup peas
Method
Heat oil, chili flakes, and jeera in a large pan.
Add cauliflower and spice and give it a mix.
Add 2 tbsp of water to the pan and cover with a splatter lid for 4-5 minutes.
Add peas.
Give it a nice mix and keep mixing for about a minute before seasoning with salt and pepper.
Turn the stove off, remove the rosemary and garnish with coriander.
