Healthy French Toast

Happy Valentines Day

I am such a hopeless romantic. I love flowers, small gestures, and home-cooked meals. I equally love hugs, surprises and generally spending time with people. I love people. I’m also very easy to please and if I had someone to share this day with and love, this is what I would make them for brekkies.

Ingredients for 2 people

4 eggs

4-5 slices of bread

1 tbsp milk

1 tsp salt

pinch of pepper

2 tbsp honey

handful of blueberries

1 banana sliced

Method

  1. Heat large pan on medium to high heat

  2. Spray pan with spray and cook.

  3. In a bowl, mix eggs, milk, salt and pepper together.

  4. Dip a slice of bread into the mixture, coating it well and then dropping it into the pan.

  5. Flip after 2 minutes and fry the other side.

  6. Repeat until you have no egg mixture anymore.

  7. Layer french toast with sliced banana’s and blueberries.

  8. Drizzle with honey and dust with icing sugar.
