Mango Sorbet
There used to be an shop in Mayfair that pressed fruit and yoghurt into a healthy ice-cream.
You would choose frozen fruit from the shop stand and 8 years ago I used to pay more than R30 for two scoops of this cold gold.
Now that I know how to make ice-cream in a blender, I want to share an easy one with you so that you can make this for your family and friends.
Much like my nicecream recipe, this one is quick to prepare but it does require that you set it in the freezer for 2-3 hours.
And you pretty much can freeze and blitz whatever fruit you fancy. I just happen to enjoy mango and lime together.
Ingredients
500 g frozen mango
1 small can condensed milk (I use the lactose free one from Dischem)
2 tsp vanilla
juice of 2 limes/1 lemon
pinch of salt
coconut shavings and lemon/lime zest
Method
Blitz all of the above ingredients, except the zest and coconut, for 3-4 minutes until it’s completely smooth.
Pour into a loaf pan dressed in parchment paper.
Sprinkle with coconut and zest.
Freeze for 2-3 hours.
