Mince Tortilla

Tortilla’s are one of the easiest things to make when you’re wanting to save time.

Chuck in whatever you like in there. I love leftover stir fry and yoghurt as a filling, or chickpeas and basil pesto. Today I added mince, some fresh basil, herbs and tomato to mine and one is perfect for lunch.

I also enjoy the stoneground tortilla’s which I buy from the local Spar. Of course there are other brands but stoneground is healthier.

Ingredients

1 onion

500 g mince, soya or normal lean animal mince

cinnamon stick

1 star aniseed

1 tsp jeera seeds

1 tsp chili flakes or powder

green chili’s (optional)

salt and bbq spice to taste

2 tomatoes, grated

1 tbsp tomato paste

3 cloves garlic, grated or chopped finely

1 tsp ginger, grated

Method

  1. In a pot, heat oil and fry jeera, star aniseed and the cinnamon for 1 minute.

  2. Fry garlic and ginger for another minute and add spices.

  3. Add mince and let that fry in the spices for a good 10 minutes. Add a tiny amount of water and lower the heat slightly to avoid it sticking to the bottom of the pot.

  4. Add onions and let that all steam for another 2-3 minutes.

  5. Add tomato paste and tomatoes. You can add peas to the pot at this stage or potatoes if you want.

  6. Cook your mince on low heat for about 12-15 minutes and keep adding water to the pot to prevent sticking. A tiny amount.

  7. Garnish with coriander and roll your tortilla with fresh tomato, basil, lettuce, rocket and dollops of plain yoghurt.
