Nut Butter Oat Muffins

I’m aiming to run for a long time this Saturday so when a friend of mine sent me this recipe I just had to try it.

I added a lot of natural sugar and fats to this muffin because I wanted to create something unique in that it would sustain a runner during a long haul.

There are two versions to this recipe. I have used Peanut Butter in one muffin and chocolate Macadamia Nut Butter in the other. The Macadamia Nut Butter version is my fave.

Macadamia Nut Butter Muffin Ingredients

2 banana’s mashed mixed with 1 tsp bicarb

1 tsp vanilla

2 large eggs

1/4 cup honey, raw

1/4 cup chocolate macadamia nut butter

1/2 cup chocolate chips (I used white)

1 1/2 cup oat flour

1/2 cup cassava flour

1/2 tsp salt

Peanut Butter Muffin Ingredients

1 banana mashed with 1 tsp bicarb

1/2 cup peanut butter

1 tsp vanilla

2 large eggs

1/4 cup honey, raw

1 1/2 cup oat flour

1/2 cup cassava flour

1/2 tsp salt

1/2 cup dark chocolate chips

Method for both muffin mixtures

  1. Mix the mashed banana and bicarb together

  2. In a large bowl, mix dry ingredients.

  3. Mix wet ingredients, add banana to this mixture.

  4. Make a well in the dry ingredients and pour in wet mixture.

  5. Add chocolate chips and fold in.

  6. Spoon 1/4 spoonfuls of the mixture into paper muffin cups.

  7. Bake at 190 degrees for 13-15 minutes.
