Sunny Side Up Omelette
Sunny side-up fried eggs are the only way I’ll ever eat a fried egg. Boiled eggs are my favourite and they’re the quickest protein to cook.
This omelette was made on a night when I wasn’t in the mood to cook. I wanted something quick and served it with homemade rye toast with sauce. Heaven!
You can pretty much add whatever you like to this omelette, smash the yolk - get creative. What I enjoy about it is the minimal oil because I used spray oil.
It is the perfect supper for days when simple is best and lazy is the order of the day.
Ingredients
1 egg
handful of spinach
diced pepper
3 cherry tomatoes
diced red onion
seasoning
Method
Spray a tiny crepe pan with oil.
Add all the vegetables to a very hot pan. When the spinach starts to wilt, give it a good mix and season with a tiny amount of salt.
Break egg over the vegetables and cover with a splatter lid. Leave it on the stove for 2 minutes and then turn it off. The egg will continue to cook in the heat of the pan.
Season egg well and serve with crusty bread.
