Low-Carb Broccoli Salad
Being healthy is a choice and I often liken it to cooking. You see results when you turn up the heat.
I love this salad because not only is it a time-saver, it’s delicious and healthy. I mean, let’s be honest, you can’t get any healthier than a bowl of broccoli.
This past week I decided to treat myself to a burger ahead of a weekend of rough cycles. But come Sunday it was back to basics and good habits. And I didn’t have to think hard about what to make.
In fact it was my sister-in-law, Nutan, who introduced me to this crunchy dish. During a recent visit I was puzzled why she chose to serve us broccoli for lunch. But I quickly fell in love with the texture and taste of this raw salad. Even my nephew had a go at it which is rare because most children don’t like vegetables.
Did you know: 1 cup of corn contains 41 g carbs. Broccoli has a low 31 calories per cup and has less than 6 g of carbs. Broccoli also provides a decent amount of fiber, which promotes gut health.
Ingredients
1 broccoli
2 tbsp mayonnaise (I used the Simple Truth brand sold in Checkers)
1/4 cup of low fat plain yogurt
1 wheel of low fat feta
1/2 cup of steamed frozen corn
Method
Mix the mayo, yogurt and diced feta together in a bowl
Toss broccoli and corn in the mixture
Season with black pepper/fresh herbs
