Creamy Maize And Peanut Butter Porridge

If you exercise and need a good, nutritious breakfast to replenish, I recommend this porridge with all my might. I usually make this midweek when my muscles are starting to feel tired.

I used to often buy smoothies after a workout but I’ve discovered it’s actually not that good for me. Sugars in fruit juices and smoothies can be a bit much for your body. However, this bowl of creamy goodness is the perfect energizer. It’s made from Iwisa Maize Meal (the creamy version) and has 0 sugar. It is very high in calories though so I tend to limit this to just once a week and when I do have it, I skip my snack if I can until lunch.

Did you know: Maize is a good source of iron and protein. 100 g of creamy maize meal has 328 calories, 8 g protein, 3 g fat and a massive 72 g carbs. Being a starchy food it will release energy slowly into your bloodstream and keep you full and energized for longer.

Ingredients

1/4 cup Iwisa/Ace Creamy maize meal

1 tsp of peanut butter (sugar free if you have is even better)

1 1/2 cups hot water

Method

  1. Put your stove on one level below high.

  2. In a small non-stick pot, add your water and then your maize meal.

  3. Stir until the maize meal is completely combined and don’t stop.

  4. When the porridge starts to boil, stop stirring immediately, take the pot off the heat and reduce the stove to very low.

  5. As tempting as it is to stir, don’t do it again.

  6. When the temperature reduces to low, put the pot back on the stove and let the porridge cook through for 5 minutes. If you need more water add it now, but don’t stir.

  7. Lastly, add peanut butter and sweetener/sugar and mix with your spoon.

  8. Dust with cinnamon.
