Cranberry Cabbage Salad
Cabbage salads are no fuss, easy to whip up and don’t require a lot of ingredients.
You can add corn to it as a carb, a wheel of feta as protein and, voila! It will be the perfect lunch or dinner. I usually enjoy cabbage salads with cheese because it is an easy protein for me.

Ingredients
1 packet shredded cabbage
2 tbsp mayonaise
1 tbsp low fat plain yoghurt
1/2 wheel low fat feta, crumbles
1/8 cup cranberries
handful of coriander
1 tsp lemon juice
black sesame seeds/poppy seeds
sumac spice (optional)
apple (optional)
1/2 cup sweet corn (optional)
Method
In a large bowl, massage the cabbage with the mayonnaise.
Add, lemon juice, coriander, yoghurt and feta to the bowl and give it a good mix with a fork.
Add the cranberries, sweet corn or slices of apple and mix it in.
Sprinkle poppy seeds on the top and add seasoning like Sumac to the salad.
Pop in the fridge and devour cold.
