Flour-less Peanut Butter, Banana, Oat Cookies
This week I begin training for a cycle race and I wanted a healthy snack that would fuel me almost immediately after a grueling session.
I was going to make peanut butter nut balls but all that changed when my brother and his gorgeous family gifted me with a bag of Toblerone. The dark chocolate is 50% cocoa so I decided to create a healthy biscuit with natural sugars. This is not a vegan friendly cookie but it is vegetarian and can be enjoyed during this Hindu fasting month of Shravan.
Did you know: Dark chocolate is antioxidant-rich and is almost an immediate mood booster. Studies show that it can also improve cardiovascular function, memory, vision and longevity. But before you head off and buy slabs of chocolate, don’t discount the high fat content. One or two blocks a day goes a long way.
Ingredients (Dough will yield 10 cookies)
1 ripe mashed banana
1/4 cup peanut butter
1/4 cup dark chocolate (I used tiny Toblerone pieces)
1/4 cup dried cranberries/raisins
2 tbsp honey
1 cup rolled oats
1 tsp vanilla essence
pinch of salt
Method
Pre-heat oven to 190 degrees and spray a baking tray
Mix everything in a bowl
Scoop 1 tbs and shape into a round ball
Place on tray and flatten with a fork (reshape if the cookie cracks a lot)
Bake for 15 minutes.
