French Toast
French toast or egg bread, as I know it, is possibly one of the most comforting meals in the world. I almost always order it when I go anywhere for breakfast and want a treat.
My mother used to make egg bread with masala when I was little. And as I matured that specific type of egg bread became my staple holiday food at the start of every trip. I don’t ever hit the road without some masala egg bread - unless I’m trapped in a hotel and going on a long trip from there.
I recently went to Cape Town and woke up at the crack of dawn to get some on the griddle. I thought I’d share this recipe with everyone because it’s honestly lovely.
Did you know: French toast can either be a sweet or savoury dish. It goes well with bacon, macon, and maple syrup.
Ingredients
3 eggs
handful of coriander
salt and pepper to taste
1/2 tsp peri-peri spice (can omit)
1 1/2 tsp masala or crushed green chilies (can omit)
olive oil for frying
a knob of butter
green chives for garnish
Method
Whisk together, eggs, salt, pepper, coriander, spice, and chili.
Heat a non-stick pan on medium-high heat.
Dip bread into the egg mixture and coat well.
Place it in the hot pan, laced with oil, and chuck in a piece of butter.
Fry each side until golden brown and serve warm with honey.
Garnish with chives.
