Oat Pancakes
I’m always trying to make breakfast with the 1 protein, 1 carb, 1 fruit portion at the back of my mind. These pancakes are just that. To boot, they’re light and you don’t have that bloated feeling after you’ve eaten.
So I didn’t waste time looking for oat flour. Woolies does sell it but I didn’t have. I simply put 1/2 cup of oats in a food processor and blended until it was a fine powder.
The recipe is for a single person because I live alone but you can adjust it to your liking. Enjoy!
Ingredients
1/2 cup of oats (blend in a food processor until powdery/Alternatively buy oat flour at Woolies)
1 banana
1 large egg
1/4 tsp baking powder
1/4 tsp salt
1tsbp chia seed
1/2 tsp cinnamon powder
1/4 cup milk of your choosing/water if you’re lactose intolerant.
Method
Smash the banana with a fork and add egg, milk and chia seeds to the mixture.
Mix in the flour, cinnamon, salt, baking powder with a fork.
Use a 1/4 cup to measure out batter and pour onto a hot skillet. Flip when you see bubbles.
Garnish with fruits of your choosing and a healthy dollop of honey.
