Cassava Pancakes
This week hasn’t been easy. I’m going to be working closely with my dietitian again to shed a few kilo’s.
My new early morning shift, the times that I eat and the choice of foods that I consume needs some fine tuning. Recently someone passed a comment that I don’t always eat well. This is true. I love donuts and condensed milk but, I don’t eat it without carefully planning what to do with the extra calories.
The food plan that worked well two years ago is not working anymore because sleep deprivation is pushing my hormones into overdrive. I am lacking cortisol once again and that’s confusing my system big time.
This pancake recipe was developed minutes after a long run. I had energized my body with peanut butter (fat) honey (sugar) and 1/2 slice of bread (carb) before my run. To refuel I packed in the protein.
Ingredients
1/3 cup Cassava flour (carb)
2 eggs (protein)
3 tbsp milk (I used Easi-Gest by Parmalat)
1 tsp baking powder
pinch of salt
Method
Heat a pan, coated in Spray-And-Cook.
In a bowl, mix all the above ingredient with a fork like you’re whipped eggs for scrambles.
Pour 1/3 of a cup into the pan and distribute it evenly.
Bubble will start to form. After 1 minute. Flip.
Wait another minute and remove from the pan.
Serve with a portion of fruit, honey or maple syrup.
