Spinach & Green Bean Soup
Now you’re probably wondering why the hell you even clicked on this link. What’s so inspiring about this soup.
To be honest, nothing. But one thing I can tell you is that it doesn’t taste like you’re drinking a spinach smoothie. There’s tons of flavour in here and if you follow the recipe, prepare to be amazed.
This recipe will only make two bowls of soup. It’s jam packed with healthy vitamins and minerals and there’s added protein from the pea protein powder. There’s also tons of garlic and onion so the thickness is surreal.
Ingredients
two bags of spinach (equivalent to two big bunches)
1 large packet of green beans
4 cloves of garlic
1 large onion, sliced
sumac powder
2 tbsp pea protein powder
about 8 leaves of fresh sage
1 L vegetable stock or chicken stock for an even nice kick
Method
In a large pot, fry onions in 1 tsp oil with the sage.
Add 2 tsp sumac powder.
Add garlic and let the onions get a tad brown before adding the green beans and spinach.
Cover and when the spinach wilts slightly, add the stock liquid to the pot.
Drop in your pea protein powder.
Boil for 25 minutes, let it cool and blend it all together until it’s a fine soup.
Add yoghurt and a dash of turmeric to the top of your dish at the end. It’s an added immune boost.
