Dark Chocolate Coconut Clusters

I have been training hard for the Cape Town Cycle Tour and I wanted to create my own race fuel.

These chocolate clusters are packed with good fats and I ate them in the week leading up to race day. It fueled, refueled and made me feel very satisfied with life because it was sweet and felt like a treat.

Did you know: Dark chocolate is actually good for you and if you eat one or two blocks a night regularly, it can help reduce sugar cravings long term.

Ingredients

250 g dates

5 tbsp desiccated coconut

1/8 cup chocolate macadamia nut butter

1/8 cup peanut butter

1 tbsp honey

1 slab 80% Lindt dark chocolate

Method

  1. Line a flat tray with baking paper.

  2. Cut dates into fine pieces and heat it in a sauce pan until soft. Leave to cool for 10 minutes.

  3. Cut chocolate slab into tiny pieces.

  4. Add honey, coconut, nut butter, and peanut butter to the dates. Mix well.

  5. Add chocolate to the warm date mixture. You want a bit of the chocolate to melt into the mixture as it combines.

  6. Scoop 1 tbsp balls of mixture onto the prepared baking sheet. To make life easier, use a normal teaspoon to scoop the chocolate mixture out of the tablespoon. You should get 15-17 balls per batch.

  7. Refrigerate for an hour and enjoy cold.
