Gluten-Free Mac And Cheese
I’m not a very big fan of pasta, so avoiding it is easy. But I do love a good mac and cheese.
Last month, I wanted a cheesy bowl of pasta for lunch, so i conjured this bowl of goodness by using Woolworth’s chickpea pasta. The sauce is incredibly cheesy, but it is well portioned and controlled. Because this lunch doesn’t contain any vegetables, I juiced some earlier in the day and made sure I ate a side salad for extra fibre.
Ingredients for 4 meals
1 bag 250g Chickpea Pasta (Woolworths)
5 tbsp butter
4 tbsp gluten-free flour
4 cups milk of your choice (I use fat free)
2 tsp salt
pepper
240 g white cheddar cheese (grated)
1 tsp nutmeg
Method
Boil your pasta - follow the instructions at the back to the T. If you over boil the pasta, your dish will be grainy.
Heat the butter in a heavy-based pot until it melts.
Whisk flours into the butter until a paste forms.
Add milk to the pot 1 cup at a time and keep whisking until the sauce is smooth.
Bring to a rolling boil and keep stirring for 10 minutes.
Add grated cheese and stir well until it’s incorporated.
Season with salt, pepper and nutmeg before pouring over your pasta and mixing it well.
Serve hot.
