Almond Date Balls

I’m such a nut job when it comes to snacks that when I make them I make a meal of it. This recipe was born from a desire to create a better snack for my friend, Shay.

I jokingly told her I’m going to name this date ball, Shay’s balls. But it sounds rather rude. Lol!

These little nuggets of magic is a mix of very simple fats and sugars. I have been testing them on runs and while they’re not as good as my running squares or my banana bread, I’m going to throw caution to the wind and say it’s solid pre-run fuel. I ate two of these and did a 10km in 1 hour about a day ago. Now while this is my average it wasn’t a normal run. I was sleep deprived and was low energy. I also never eat breakfast before I run anything less than 10km.

Did you know: peanut butter is more of a fat than protein. Nuts, in fact, are the highest form of fat.

Ingredients

1/4 cup coconut

1/2 cup almonds

1/8 cup maple syrup (the pure kind)

3 tbsp peanut butter

1 block Safari dates

2 tbsp Cacao powder (I use the Whole foods organic)

Method

  1. Blend everything in a mixer or a blender. This will take four 30 second bursts.

  2. Every time you stop the machine. Scrape the sides of the bowl and blitz again.

  3. Scoop 1 tbs of the mixture into your hands and roll into a ball.

  4. Sprinkle with melted dark chocolate and orange zest. Or salt.
