Chia Dessert

I’m such a lover of desserts, and I give credit to my mum for my cravings of moorish delights. Pineapple pudding, custard and jelly, trifle, even the humble fruit salad would find its way to the table for Sunday lunch.

In an effort to be healthier I created a creamy dessert from chia seeds. It’s no trifle but every spoonful is suprisingly satisfying.

Did you know: Chia seeds may be small but they sure hold a lot of power. They’re full of nutrients and pack a mean dose of omega-3 fatty accids, fibre, iron and calcium. They’re also very rich in antioxidants. Chia, native to Mexico and Guatemala, is also an ancient Mayan word for strength.

Ingredients and Method

Soak 2 tablespoons of chia seeds in 3/4 cup of milk.

Add 1/2 spoon of vanilla essence, sweeteners and orange zest.

Rest in the fridge for 2 hours and enjoy cold, topped with fruit.
