Carrot, Cucumber and Blueberry Smoothie

I’ve only recently been incorporating smoothies into my diet. But it’s been such fun and a time saver making them. I particularly enjoy sipping it in traffic, especially on days when I have to rush from gym to work in the mornings. I feel like a winner.

This recipe is a breakfast and I used my 1 carb, 1 protein, 1 fruit rule. The carrots is my carb, the yogurt my protein and my fruit is a banana (also added carbs) and berries. I use the juice of 1/4 cucumber for more flavor because I really don’t like crushed ice or ice in my smoothies.

Ingredients

1/4 cucumber, juiced

2 carrots, juiced

1/4 cup plain yogurt (I use Gero, fat free)

1/4 cup pulp from the juiced carrots and cucumber

1 tsp Chia seeds

1 small banana

1/2 cup blueberries (I usually freeze berries I buy in bulk)

Method

  1. Blend all of the above and drink immediately, or freeze for 5 minutes and then drink.
